…and succeeding!

alright, i should probably stop making it sound like i don’t know how to cook, but last night i put my ruffled apron on, and attempted to make my first enchilada. yes, thats right, i had never had one before because they always include meat or cheese, so i decided to finally take matters into my own hands… boy oh boy, i have been missing out! this is definitely going to be my new go to recipe- so delish and pretty darn healthy too! (ok, so i still really am shocked about how good these things are and can’t wait for my leftovers at lunch!)

vegan sweet potato, black bean, and spinach enchiladas

for some reason, my iphone took better pics then my cam...

8 corn tortillas (mini size)

1 can black beans

1 sweet potato

handful of spinach

4 cloves of crushed roasted garlic (more or less depending on your taste)

1/4 white onion

1 can of enchilada sauce (i used rick baylas’)

handful of cilantro

couple sprinkles of cumin (prob a teaspoon)

couple sprinkles of cayenne pepper (prob half a teaspoon)

salt and pepper to taste

preheat oven to 350*

mash pre-cooked sweet potato, and mix with black beans. add in handful of slightly chopped spinach and cilantro, as well as crushed roasted garlic (i made a whole head for a few different recipes, it keeps in the fridge for a few days) and chopped onion. i waited until the end to season with the cumin, cayenne, and salt and pepper.

lightly grease your pan and slightly coat the bottom of it with enchilada sauce.

steam your tortillas to soften them up, and then start putting big spoonfuls of your filling into your tortillas one by one. once you fill each one, roll them up and set upside down in your pan. (i was too conservative on my first couple and ended up with extra filling which i stuffed into the sides of my pan, whoops). and then line ‘er up!!!! sprinkle the rest of your sauce on top, and pop those puppies into the oven!

i think (?) i cooked mine for about 30 minutes… they will look done when they start to bubble! dish yourself out a sweet roll of goodness, top with avocado and salsa and ENJOY!!!!!!

really gotta work on modeling my food, i swear it tastes better than it looks!
