…black bean sweet potato burgers

in true tina fashion, i threw together a bunch of “left over” ingredients for dinner last night- all stuff i had lying around- and made an absolutely delicious meal that i can enjoy all week!!!! seriously, these babies are SO moist and tasty (and packed protein and nutrients!)- they are going to be my new go-to veggie burgers (even though they look like cookies)!!!

black bean sweet potato burgers (vegan and gluten free)

about 2 cups of leftover sweet potato gnocchi dough***

1 can of black beans

2 tablespoons of tomato paste

a handful of peanuts (just for kicks)

1-2 teaspoons each of cumin and garlic salt

1/2 teaspoon of  onion powder

preheat your oven (or toaster oven in my case) to 350°. pulse all ingrediants in the food processor a few times to get it nice and blended… form into about 4 patties and place on a greased cookie sheet. bake for 15 minutes on each side.

top with homemade whole foods guac and salsa, and enjoy!

***you could easily just roast 1 large sweet potato and use that instead, then adding about 1/4 cup of rice flour (or regular or whatever other flour you choose)

Sounds tasty… however looks like a cookie, you’re right.
